Robata grilling is an ancient Japanese style of cooking that originated from fisherman who would grill the fresh day's catch around a communal hearth. Our robata grill uses Binchotan coals which are white coals produced in Japan from an ubame oak tree. These coals heat to extremely high temperatures and burn at a slower rate then normal charcoal. At Ginza Red, we specialize in this technique where the fresh meat, fish, and vegetables are speared with skewers and placed on the robata grill. The juices from the grilled meats fall into the grill and are vaporized by the heat allowing the meat to be cooked in its own juices which creates immense flavor. Our guests can sit at our sushi bar where the robata grill is located and experience this technique first hand all while enjoying our diverse menu and cocktails.
